Rare flavonoids not usually found in plant are produced by microbial biotransformation. Due to the biological activity, it has great values in the research and industrial application. During the biotransformation study of flavonoids by human intestinal bacteria, production of rare flavonoids was discovered. For example, demethylation of twelve polymethoxyflavones by Blautia sp. MRG-PMF1 resulted in the production of chrysin, apigenin, galangin, kaempferol, luteolin and quercetin after complete demethylation, with the formation of rare methoxyflavones as intermediates. Here, biotransformation pathways and demethylation reactivity, along with the proposed mechanism, were presented. Application of the controlled biotransformation technique is expected to produce industrially important value-added natural products.
